Wow, are you in for a treat! I came up with the most delicious soup recipe today! I wanted to make something that didn’t require use of the food processor, blender, or dehydrator because I’ve gotten quite a few emails saying that it’s too hard to be raw if you don’t have the money for the appliances.
I disagree that it’s too hard to be raw without the appliances. It’s definitely easier to do it *with* the appliances, but it’s not overly hard to do it without. So, from time-to-time I’ll try to create recipes that don’t use anything more than a knife and a chopping board to show you that it’s not too difficult to eat raw.
Italiano Zuppa
(serves 3)
3 cups of diced mixed veggies (I used kale, cauliflower, sugarsnap peas, carrot, celery, red bell pepper, and yellow squash)
3 cups chopped tomatoes, kept in a separate bowl and sprinkled with salt
1/4 cup packed sundried tomatoes, soaked in 3/4 cups of water for 2 hours, or more
3 Tablespoons lemon juice
less than 1/4 cup diced onion
3 teaspoons olive oil
1 + teaspoons of salt (I used a total of about 1 1/2 teaspoons in the entire dish)
1 1/2 Tablespoons oregano (dried or fresh)
1/2 teaspoon garlic powder
1/2 teaspoon thyme
1/2 teaspoon bay leaf, ground

About three cups of mixed veggies, diced.

About three cups of tomatoes, diced.

Veggies and spices ready to be mixed.

Set ingredients aside to marinate for 2 hours or more.

Mix ingredients together. Finished zuppa – enjoy!
