I received an email from one of our lovely Pure Jeevan family members. Joanne is subscribed to our mailings and she received the ice cream cake recipe I had created for Jim back in January. Well, take a look at what she did with the recipe! It's LOVEly!
Hi Wendi!I took Jim's birthday cake recipe to the next level.
The first time I made it it was so good that I decided to use a spring form pan and build it up in layers.
I layered the top of the first ice cream layer and the bottom of the next ice cream layer with one banana, sliced.Yum !
Not bad for a newbie to raw food (one month 90%-100% raw) and someone who really has NEVER enjoyed being in the kitchen.

For each batch of "ice cream" I used 2 cups of frozen strawberries plus 1/2 of a large banana and 1-2 Tblsp LESS of Agave than Wendi recommends in the recipe. With so much more "ice cream" in this version I felt I could cut down on the sweetener with no problems. So you need to double the dry ingredients and also make 3 batches of "ice cream". It definitely needs to sit in the freezer overnight to set. Next time I will place sliced bananas below and above EACH of the two layers of "ice cream". I reserved 1 cup of the unsweetened dry ingredients to sprinkle on top of the cake, as per the recipe, but did not need that much. 3/4 cup would have been more than enough. I did have some "ice cream" left over. Next time I will use the largest of my 3 pans. The cakes was almost spilling over the top of the pan :-)
