Here's an impromptu interview with Matt Miller, the gourmet raw foods chef from Maggie's Mercantile, a vegan/raw restaurant in Pittsburgh, PA. We met Matt @ a recent Raw Foods Meetup here in Pittsburgh. In the video, we discuss Matt's famously addictive raw blue corn chips -- deemed by yours truly as the "holy grail" of raw foods. Below, I'll go over the ingredients, etc.
Basically, Matt said that, to make these chips, you would:
1. Soak the purple corn for 24 hours. Matt uses a Peruvian purple corn. I'm not sure where you get it outside of Pittsburgh. But, here, it's at Love Street Living Foods (here). Although, I suppose you could use any raw/properly dried (living/viable) purple corn.
2. Blend it up in a Vitamix (or food processor, though Matt says Vitamix/blender works better). Add in more regular yellow corn, blended, as well.
3. Add in ground flax seed, ground sunflower seed, chili powder, additional spices (to your taste).
4. Spread as thin as possible onto wax paper (not so thin that you can see through it, though).
5. Dry @ an enzyme-respecting temp (some say <110, some say <105 degrees, etc.). Add salt before it's completely dry.
As for quantities, etc. ... Well, you're just going to have to experiment. But that's part of the fun!
