Here's Part Two of our interview with Hatice Yavuz, co-owner of Cousin's I.V. raw restaurant in Chicago. Yesterday we talked a lot about Cousin's restaurant and the stories behind that (as well as some interesting notes about European and Turkish culture and attitude toward raw foods). Today we'll get into some of the effects experienced by many after going raw -- things like raw food detox and the strengthened connection between mind and body. Interesting stuff!
The mono meals ended and I did create that beet pasta with alfredo sauce that I was dreaming about. So, here's the recipe:
BEET PASTA
Ahh, yes... Ginkgo Biloba. What a distinctive tree, don't you think? So easy to identify, and so many reported health benefits. This one belongs to a neighbor that seems to have an affinity with Asian landscaping motifs. They also have gorgeous bamboo growing in their yard, and other Asian elements. I would have liked to have harvested some leaves to dry for some Ginkgo tea, but the owner wasn't around to ask. Perhaps some other time.

After leaving Salem, Oregon, Wendi and KDcat drove less than an hour to the city of Corvallis where they met up with their hosts the Zander's -- Joni, Steve, Bekka, and Stephanie -- a fellow unschooling family Wendi had come to know in an online forum. It was great to be in their company and we loved them right away,? Wendi wrote. ?Their home is absolutely beautiful on a really cute lot with plenty of plants and trees around ? including the most delightful flowers that smelled divine (I think they were called Daphne).
Corvallis is the city we ve mentioned multiple times -- the city that feels like it s the right fit for us. Well, it lived up to our dreams in just about every way. It s a progressive, hip town with a lot going on. The people are friendly, the weather is beautiful, the land is gorgeous, and there are lots of unschoolers. Access to fresh, ogranic, raw foods doesn't seem to be an issue anywhere in Oregon, according to reports from the road so far. While they've been away, we've talked quite a bit each night about what they're finding -- and fresh organic produce seems pretty much everywhere out west. "The west," wrote Jim Morrison, "is the best." (Surely he was a raw foodie.)
Jon Gold, owner of the Sunny Side Up Cafe (a vegan and vegetarian restaurant there) and an unschool father, put together a little gathering of unschoolers for KDcat and Wendi. They were able to meet some local unschoolers and ask questions. There was also a gathering one day at the cafe where KDcat was able to do some art at a table with some other unschool teens. It's definitely a creative, easy-going town with some fantastic people in it!
Well, Wendi and our daughter, KDcat, are headed out this evening on a train for their cross-country tour. They didn't seem so sad to leave ... maybe it's because of the bounty they're taking with them! Check it out in the banner above as well as the snapshots below! A bean and rice burrito, taco with all the toppings, tomato and pepper salad, and sweet orange salsa! Yum, yum, yum!!! I'll be posting the pic again and sharing a recipe on Monday.
Finally, some super news to share!? On Monday, after a l-o-n-g wait, Wendi finally had her appointment with a actual LLMD. (That stands for "Lyme Literate Medical Doctor."? If this and the news of Wendi's Lyme Disease is new to you, check out this post.)
I'll cut straight to the good part: Her prognosis is excellent! Yes, she's still in a world of pain and misery at the moment, but he believes (based on her blood work and her symptoms) that we've caught this early enought to fully eradicate the Lyme. (At least, that's how I understand it. I'm actually not clear on whether Lyme is ever 100% eradicated, or if it's just forced into dormancy or irrelevancy. Perhaps Wendi can clear that point up later.)
Hey Everyone- Just a quick note, in case you're reading our blog and thinking, "Wow, Wendi and Jim usually update daily! What's up ?!!" We'll get back to it pronto, I promse -- maybe even later today! Turns out it's just a TON of work orchestrating a tour like this, especially across a three-hour time zone. But, now that we're getting used to it, I think we can look for some more timely updates. The latest is from Corvallis, Oregon. But, we're also going to talk about Portland a lot more soon! I hear ya. I do keep checking in though, and I'm looking forward to when you get your groove.
I really feel for you, Jim. Your girls gone, having to keep track of their movement, run a household on your own and still work that stupid job. Poor baby. Just know that I am thinking of you, and sending you love from New Mexico.
And Wendi, AAAaaaaaaaaaaaaaah! I can hardly wait 'til you get here!
