Here it is: Putting it all together. Here you'll see what we use for our taco shells and how we build up our taco. Quite often, we also make a raw sour creme using cashew nuts and lemon juice. But, for these tacos, it'll just be meat, salsa, and guac. Enjoy!

Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. Yesterday, we covered the concept of "unsubscribing" from unhealthy practices. This was of course based on the common Internet practice of subscribing and unsubscribing to various things like newsletters and email lists. I receive quite a few of these each day, many raw foods ones and many non-raw ones. Among the non-raw, one that has been interesting to me lately is called the Art of Non-Conformity, penned by Chris Guillebeau. Basically, Chris' site chronicles his adventures in reaching his personal goal -- to travel to every country in the world! Along the way, he writes about all sorts of out-of-the-box things, as the blog name implies.
Today, he posted something that is remarkably insightful and applicable to our subject matter here, even though his context was completely different. The entry, entitled simply "Before and After," discusses the drinking water problems in much of Africa, focusing for the moment on Liberia. Atop the piece (the "before" picture) is a muddy water hole, the only source of drinking water for one village. The next picture (the "after" shot) shows a different, very happy village obtaining fresh, clean water from a newly installed well. Chris closes his article with the following quote:

Jim here... Since many people have asked me how she liked the surprise gift, here's a quick, unedited video taken last Saturday on Wendi's birthday. We had gone to the park that evening to hang out and catch some fresh air. I took a few minutes to ask her about her day, and thought I'd share this with you.If I showed you the video of her receiving the gift that morning, I'm afraid all you'd see would be tears all around the dining room table. (We were all rather emotional about it.) So, take a look at this video for now. Wendi said that she wanted to write something here as well. So, that will no doubt be coming soon.
By the way, at the end of this video, Wendi mentions another video of a man we interviewed earlier that day on Wendi's birthday. I was going to edit some of that in, but we decided to run that video here on its own this Thursday because it addresses a question Wendi gets quite often. You'll love that video, as it's a great testament to the power of raw foods. Here's some coconutty video footage from our Florida Keys excursion. First up is some footage of Randesh, from www.TheGuana.com, who obtains fresh coconuts for Charlie Wilson's Key West restaurant, Help Yourself (see yesterday's blog post).Notice that Randesh uses a proper piece of equipment -- a large machete (or cutlass) -- which makes short, easy work of opening these precious gifts of nature! In the video footage following that, you'll see how comically difficult it is to open a young coconut when you lack the proper equipment. We actually went out looking for a machete, but could only find a large chef's knife at a local K-Mart. Yep, they were sold out of machetes! (Ironically, the chef's knife -- the heaviest one the store had -- cost about $17, while plain old machetes run just $10 or so at most hardware stores. Next time we'll keep looking...)
For the most part, I've been eating intuitively from the very start of my raw food journey (which began over two years ago!). I noticed that I was drawn to different foods for blocks of time, and as my interest would wane I'd find myself drawn to another raw food. Anyone who has followed my story to health knows about my love for young Thai coconuts. My entire body would vibrate with physical excitement every time I picked up another case of those life-enhancing baby coconuts. I felt like a child receiving a much-desired gift---giddy with excitement and unable to stand still. I'm not just saying that, either---it was a very strange sensation, feeling such excitement over a food.
Well, my love for the coconuts faded and I found myself drawn to other foods over the past few years. However, none of them ever compared in intensity to my desire for the coconut. I can't recall all of the foods I cycled through, but there were plenty of food cycles I went through. Currently, I'm intuitively drawn to the pineapple. I want to eat it at least once a day, sometimes more. I haven't tired of it in the least bit.

Jim here... Just a brief, fun post for the weekend... We just saw the movie Scott Pilgrim vs. the World a few days ago. ?It's a great movie, for many reasons. But, vegans will get a real kick out of one scene involving a character named Todd Ingram, who has super powers. ?Why? ?... Because he's a vegan! ?We won't spoil the scene, though. But, if you're a vegan, or know a lot of vegans, you should get a pretty good laugh from this! I think they nearly had to throw Wendi and me out of the theater, as we were laughing so hard (especially Wendi). ?Enjoy. :-)

These days, I spend most of my free time cleaning up our fixer-upper home in Portland, so I haven't been going to the gym or regularly running as I had in the past. ?Hopefully, the house work is sufficient physical activity for me -- it sure does generate an appetite most days!
