Jim here... As I hinted at last week, I decided to try changing things up a bit and seeing what I thought of it. The salad you see above included the first cooked food I've had in more than two years. If you look closely, you can see that I sprinkled on a few spoonfuls of black beans. Also, in the upper left corner, there's a small spoonful of quinoa. I don't want to give the wrong impression here: ?This blog will certainly remain a major go-to source for raw food nutrition information. It's just that, today, I want to talk about experimentation a little bit.
First, I think it's generally healthy to experiment with your diet -- especially when you get the sense that something isn't working in your current diet. The fact is, diet is a dynamic thing, not a static aspect of your life. It has to be this way because so many factors affect our physiology on a day-to-day basis. It turns out that planning a 40-day/40-night cross-country trip is a LOT of work! (Who knew ??!) Wendi and I seem to be spending every waking moment planning this thing, which may explain why we've missed a day or two's posts here on Pure Jeevan. But, we're gearing up for something absolutely amazing -- and it all starts next week!? So, if there is a quiet day or two this week, just keep in mind that the rawsome content is going to be absolutely insane here starting late next week and continuing through March into early April!
Today, we wanted to extend a huge thanks to Jeff and Helen Rose, owners of Natural Zing, for offering to sponsor the snack portion of Wendi and KDcat's trip. Jeff and Helen understand that, being a raw foodie, it can be a little tough to be on the road for such a long time. Sure, Wendi and KDcat will probably be snacking on a lot of fresh fruit, but it's also nice to have some packaged raw goodies as well while you're traveling. Eating only mono meals is going pretty well. I'm on my third food, so far, and have ended day two. This evening I've started my third fruit: Pineapples!

Rawbin Rescues Turtle
I had a fantastic time at the 2008 Green Festival in Washington, DC. My wonderful friend, Rawbin, picked me up last Thursday and we had a nice drive back to her place in Maryland. She lives in an almost magical setting with wooded areas, horses, a goat, chickens, dogs, and cats! KDcat will not want to leave when she visits Rawbin someday. Above is a video of Rawbin rescuing a turtle that was in the middle of the road near her home.

Recently a friend at school told [my daughter] about the things animals go through to become our food and it has sickened her to the point where she wants nothing to do with meat except 'maybe' fish sticks.I'm so not against this in any way but my concerns are her eating enough other foods to balance out the vitamins and nutrients she got from meat so that it doesn't affect her health or learning development."
Above is part of a letter Jim received from a Pure Jeevan member. The letter was really three separate questions about the raw food diet in regards to (1) nutrition and development, (2) financial stress, and (3) group living. Since my response was getting quite long, Ive split up the questions and answers. Below is my response to the nutrition and development concern. We just returned from the East End Food Co-op, where we answered raw food questions for two hours. We were still answering questions on our way out the door, and would have stayed longer but the place was closing. ;-) So, if anyone from this evening stops by our site and you still have questions, just comment here (or send me an email) and I'll be happy to answer them.
I'm more of a one-on-one kind of person, so I was a bit nervous about sitting in front of everyone to answer questions. Jim and KDcat were there to help me, of course, otherwise I probably wouldn't have been there at all. Once people started arriving, I was comfortable. The first people who entered the room were super sweet and I could tell they were genuinely nice people. Then little by little the room filled up, and I was surprisingly comfortable.Maybe in addition to all of the other positive changes in my life, my self confidence is getting better, too!
Ever since developing a personal conviction a few years ago that following a raw vegan existence was the best lifestyle for me, I've lived somewhat in conflict with the day-to-day corporate business environment in which I make my living at the moment. As we've directly stated many, many times, we're in the process of changing all of that. But, making such a huge change takes a long time because careers are in many ways very anchoring. We may write more about that process because it's true that going raw (or, really, adopting any kind of diet outside of what most other people eat) can lead to significant changes in your life. Between Wendi and me, I think we've gone through pretty much all of them, and there's certainly value and relevance in sharing most of those things here. Today, though, I thought I'd share what I call my "$75 Salad Story."
In the business world, "networking" is among the more prevalent activities anyone does. It's pretty much always going to involve food , right? It's always a breakfast briefing, meeting a client over lunch, or attending a dinner party (complete with a cocktail hour). ?The deck is more or less stacked against you at these things because, let's face it, they're usually set up to provide what most people perceive as a pleasant experience. And, quite often, that means a certain degree of culinary decadence / indulgence -- invariably at venues that have never heard of raw chocolate or raw apple pie (which, to me, is 10x more appealing and exciting than the ubiquitous "chocolate fountain").

Jim here... Since we posted Wendi's two-part series on pasta-making techniques (part 1, part 2) last week, I thought I'd follow up with an additional novel use for the spiralizer -- super-delicious, blazingly fast, ultra-low-fat sweet potato chips! We've done some really great things with sweet potatoes before. (Anyone signed up as a member of the Pure Jeevan family has likely already received our prized sweet potato pancake recipe.) But, these chips are amazing because they satisfy that unmistakable urge for crunchy, healthy snacks -- and in record time. Friends, if you have a dehydrator and sweet potato on hand, you could literally be enjoying these things in under three hours. So let's get going!
As Wendi demonstrated in the videos last week, you can easily make "rounds" using the spiralizer by simply making a vertical slice throughout your vegetable prior to placing it on the spiralizer. So, if we were looking down at the sweet potato, the cut (which goes all the way down the length of the vegetable) would look like this:
