Jim here... Exactly one month ago today, I announced my intention to do a month-long trial of a low-fat raw vegan protocol largely based on the well-known 80-10-10 diet. I posted a half-way point update on May 15th, and now here we are at June 1st already. So, are you ready for the thrilling conclusion

As I've stated before, I went into this experiment rather hard-core, with one full week of zero overt fats, and then gradually introducing a few richer ingredients (although keeping within the 10% fat ceiling). I found much of the past month to be an exercise in restraint and self-control, similar to the issue many people face when going raw while the rest of the family is still eating cooked foods.However, it got significantly easier as time passed.

I've done it, I've done it, I've DONE IT!!!? I've perfected a recipe for raw vegan potato pancakes! My friend Melissa shared her potato pancake recipe with me and, like always, I had to play around with it (I rarely go by a set recipe). Had it not been for her original recipe, I wouldn't be writing this post! So, thanks, Melissa!!

In addition to the potato pancakes recipe, I'm going to share another amazing recipe I created for Jim's birthday this past weekend: Raw Vegan Ice Cream Cake!! YUM!

Correction: I said "Lenuria" a number of times in this video, but it's actually Lunaria! In any case, we wanted to share some additional description for this plant. Here's a quick paragraph from Wikipedia:

Lunaria is a genus of flowering plants in the family Brassicaceae, native to central and southern Europe. It includes two species, Perennial honesty and Annual honesty. They are widely grown as ornamental plants in gardens, and have become naturalised in many temperate areas away from their native habitat. In the language of flowers, it means Sincerity and Forgetfulness. ...The common name "Honesty" arose in the 16th century, and it may be due to the translucent seed-pods which are like flattened pea-pods and borne on the plant through winter. In South-East Asia, it is called the "Money Plant," and in the United States as "Silver dollars," because its seed pods have the appearance of silver coins.

Jim here... Yesterday, Wendi toughed it out and typed up a lengthy health update (a painful process for her -- trust me!). So, for the rest of this week, I'm going to fill in here (letting her get back to her resting and healing) and share a few interesting stories related to this Lyme adventure. But first, I wanted to add that today brought some great improvements in Wendi's condition. She was able to do a physical movement (wrapping a towel around her head) without pain for the first time in months. So, we really think those antibiotics are starting to kick in.

Today's topic is intuitive eating. I'm certain we've covered this many times on the blog here. So, rather than explain what it is again, I'll just share an intresting example. Basically, while dealing with these Lyme symptoms, Wendi experienced a serious craving for olives.

Welcome to Day One of "Dressings Week" here on Pure Jeevan. After finding out that KDcat took it upon herself to film a segment of "Makin' It Monday, Guest Raw Chef Edition," I decided that we should probably spend an entire *week* focusing on salad dressings.

Here's a video demonstrating a technique for making super-fast, vibrantly beautiful, tasty salads! If you frequently find yourself in a rush, but also want a healthy meal, definitely check out this mandoline technique. (Further commentary below, after the video...)

For today's installment of Makin' It Monday, we wanted to share something that we've been making a lot of lately. It's so simple, yet so delicious and refreshing. Here's the recipe:

  • 2 cucumbers
  • 3 large stalks of celery
  • 1 handful of cilantro

That's all!? You might finish with a pinch of your favorite salt (optional).? Also, since the cucumber is an extremely water-heavy veggie, I would advise you to run it through the juicer several times. Here's what I do:

As many of you know, Kevin and Annmarie Gianni (of Renegade Health) have now started their RV tour, for which they selected Pittsburgh as their official kick-off location. While here, we at Pure Jeevan took a special ride in "The Kale Whale," their veggie-oil-powered RV. Inside, we enjoyed a comfortable ride (which included hanging out with Johnny 5 -- their cat -- and drinking some hot tea prepared right there in the Kale Whale). Outside, we endured the freezing cold temperatures of Pittsburgh while pumping filtered used veggie oil into special holding tanks in the RV.
