You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. Wendi tells a funny story sometimes about a woman she'd met who was considering undergoing gastric bypass surgery to help her lose weight. When Wendi asked the woman whether she'd consider changing her diet to a raw foods regimen, she responded with something like, "Oh, no, that's too radical."
This is really what it's come to in society; having part of your digestive system surgically altered (in a profound, irreversible, dangerous, and invasive way) is no more than some nonchalant, consequence-free elective decision ... while eating more salads is viewed as "radical."
Let's take a quick look at a few dessert pictures, then compare and contrast, shall we First up is a small slice of some normal pastry:
Looks sinful, right It seems to proudly display its bready crust, its gooey chocolate center, some sort of butter-rich top layer coated with lovable little bits and bobs, and a liberal sprinkling of confectioner's sugar to make the whole thing cute as a wintry scene from one of those holiday specials hosted by the claymation likeness of Burl Ives. I'm sure it's delightfully rich, too. A tad small, though, eh ? It's probably all anyone can take of such decadence without worrying about clogged arteries or putting in extra time on the tread mill for the next three days.

Jim here... Over the weekend, I'd made a string of videos for Pure Jeevan using my handy-dandy new phone. To my great surprise, when I went to post them to YouTube, they all came out sideways! So, I'm sorry, friends... you'll have to endure (if you so choose) a somewhat disorienting video, below. But, hey, at least it reminded me of that wondrous quote from the movie Sideways! I imagine Paul Giamatti describing one of my own recent creations this way -- a sort-of half-raw, yet still very healthy delight that I like to make sometimes.
My reason for featuring a less than 100% raw recipe is two-fold. First, I'd been discussing transitioning to raw (see yesterday's post). And, adding more raw into your non-raw diet is a great way to transition. I believe that raw sauces are an excellent way to achieve this, as I'll explain in the video. Second, if you do prefer a 100% raw dish, then you can simply replace the beans with something else -- perhaps sprouted beans, or maybe your own invention from the dehydrator.
Did you know that approximately 70% of your muscle, 80% of your blood is water, and 85% of your brain is made up of water? When we are born, we are nearly 90% water by weight, and as we age we lose more and more water (think of a grape slowly shriveling up into a dried raisin).
If you consume 100% fresh raw foods (with none that have been dried or dehydrated in any way), your body is receiving the cleanest, most pure water possible and you probably don't experience a lot of thirst. The less fresh foods an individual consumes, the more their needs for water increases.
Last night, we watched a movie called Barney's Version which, among many other things, touched on the issue of Alzheimer's (or dementia). (It also touched on the issue of painfully awful movie titles, in my opinion.) But, I have to admit: Movies like that (or, even being around people affected by this) cause me to seriously look at my own life and reflect upon how I might be doing in terms of preventing not just Alzheimer's, but all major diseases.
My grandmother had severe dementia, and we witnessed the full progression of this awful condition for many years. I felt awful for her and readily admit that it scared the hell out of me to know that a formerly sharp, witty human being could end up this way. If you've never been around it, trust me: You do not want this for yourself or anyone.
One of our readers, Julie, asked me to update her on what kind of diet I'm doing and why I'm doing it. The last time I publicly made changes with my diet, I received many similar questions. So, I figured maybe it would be a good idea to respond to her question here on the blog for anyone else wondering the same thing.
I did explain, in a long post, about experimenting with my diet being important to me.If you didn't read that entry, it will answer a lot of your questions. For many of you, I think I know what you are thinking: "Wendi was pretty much morbidly obese, her health was horrible, but she's now healthy. Why would she change anything with her diet when she has already found what works "?
Well, it's true. I am extremely healthy compared to how I was before I started consuming raw foods. Here are some pictures to show the changes, to motivate some of you currently struggling with eating more raw foods...
Is low fat more expensive? When I was eating a lot of nuts and seeds, in the back of my mind I kept saying, "Someday you'll eat less of these nuts and seeds, and you'll save a lot of money." I really believed that to be true because organic, raw nuts and seeds are outrageously expensive.
For one hundred days, I'm transitioning to a lower fat raw diet. I'm down to fats only in the evening, and for the next ten days those fats will only come from avocados, young coconuts, and possibly some hemp seeds. If I'm not hungry for the fat, however, I'll go without it. That hasn't been the case yet, though. By dinner time I'm ravenous and wanting to eat heavy, dense foods to calm the hungry beast in my belly. Even though I've been including some fats in the evening, I'm eating significantly less than I normally would if not doing this challenge. So, I've been eating more fruits and vegetables to get the calories I normally received from nuts and seeds.

Carob Peppermint Hearts
This is a recipe I created to take the place of a packaged raw cacao dessert that Jim loves. I don't like to eat cacao, because it disturbs my heart, so I use carob. A new raw friend asked for a recipe for this dessert, because she loved it so much, but I don't have one. I dump walnuts, coconut, agave, and peppermint oil into the food processor and mix until it's a consistency that can stick together. For Valentine's Day I shaped the mixture into hearts. Sweet!?
Jim here... Here's a short video from last Saturday when we were out distributing literature about reversing diabetes naturally and the raw foods lifestyle. In it, we interview a local man, R.T., who had stopped to talk with us, went on his way, and then returned again to where we were standing a few moments later rather astounded.
You see, he'd seen a "before / after" flyer showing Wendi's "pre-raw" pic next to her "raw" pic and couldn't believe the two pics were of the same woman!? Many people who have significant weight to lose (or, like R.T., know someone who does) wonder whether losing so much weight will result in saggy skin. He was so amazed at the transformation, he decided to come back and ask. So, here's the raw answer to that question...
