I'm makin' nothing today, or for the next eight days! Think of all the time I'm saving myself by consuming only mono meals for nine days. What will I end up doing with that extra time? So far, today, I've spent a long time outside soaking up the sun's beautiful rays that I've missed far too much this Winter. I have no idea what the rest of this mono journey is going to be like, but I'm up for the adventure!
I've started a little journal on my desktop to track my nine days of mono meals, so I'll share what I've written from time-to-time. Here's what I have, so far...
Okay, so here's a recipe that may make you raise an eyebrow. "Baked " "Rice " Well, it's not really baked and there isn't really rice in it, but it tastes like a baked rice and veggies dish! I created this one day by mistake and we all loved it.
Baked Rice and Veggies
2 cups pureed sunflower seeds

Throughout the year, I go through various phases of fruit preferences. Right now, it's citrus. I eat probably four large grapefruits per day (dark reds). The darker the red the better, IMHO. I can get quite disappointed when the grapefruits are listed as "ruby red" but turn out to be just regular pink ones. I've noticed that the ones I like the most have an orangish tint to them, as though they've been left to ripen on the bush a little too long. Also, the best ones I've had this year have been from Texas. So, find yourself some burnt-looking Texan grapefruits & enjoy the blood-red bitter-sweetness!

For today's Makin' It Monday feature, we'd like to present "Salsa Campechano." We'll have to admit, though, that we do not speak Spanish. So, we have to give some credit to Google's online language translator. When we went to name this recipe, Wendi suggested that this is a "manly" dish (since I created it). However, we didn't find the perfect Spanish word to fit the recipe.Then, considering the walnuts in the recipe, Wendi suggested that perhaps "hearty" was a better adjective. Google returned the Spanish word campechano for this, and we immediately thought: Yes!, that sounds just perfect!? So, here's an amazing recipe for you. It's a hearty salsa recipe, but I actually like to eat it as a soup.
Jim here... We've always been fans of the Simply Raw people -- or, as I call them, the "Reversing Diabetes Naturally" people. Or ... are they the "Raw for Thirty" people? Seriously, they should probably settle on one name, don't you think? In any case, they emailed us again lately to let us know about a new video promotion they're doing, in which they'll be sharing some great videos from Morgan "Super Size Me" Spurlock, David "Avocado" Wolfe, Mike "Natural News" Adams, and Dr. Joel Fuhrman. (Sorry, I don't have a nickname for Dr. Fuhrman yet.) So many things have changed and/or been updated, not the least of which is the general look and feel of Pure Jeevan. (We did base the new design on much of the look and feel we established many years ago. But, the site has now been modernized -- adding a third column, leveraging more complex style sheets, and integrating more with social media sites like Facebook, and quite a few behind-the-scenes programming updates.)
Continuing with our week of ways to keep a sharp mind, let's focus on the one widely accepted indicator for dementia or alzheimer's: heart disease. If one wants to dramatically reduce the chances of brain degredation, the first step to take is keeping the heart healthy.
The key advice most health specialists agree on when it comes to a healthy heart is the reduction (ideally eliminatain) of unhealthy fats in the diet. The unhealthy fats are usually seen as solid fats, like butter, margerine, and shortening. However, it's important to not overlook the fats that are also found in meats. By substituting unhealthy fats with something healthier for your heart (like extra virgin, cold-pressed olive oil), as well as transitioning to leaner meats if you are a meat eater, you will be taking some important steps in keeping your heart healthy, as well as your mind.
