Nadi Balance: Part VI

Today for "Take the Time Tuesday," we'd like you to take the time to meet Mimi Kirk, whom many of you may know as the winner of PETA's "Sexiest Vegetarian Over 50" contest last fall. If you're interested in longevity, and how diet influences the way we look, act, think, and exist, then you'll definitely want to listen closely to what this vibrant woman, who is 71 years young, has to say. This is my version of a beanless hummus. One of my close friends adores the taste of Israeli Hummus and she thinks this tastes just like it. So, try it for yourself and let me know! Jim will eat this if he doesn't see me using the zucchini (he doesn't like the idea of eating zucchini for some reason). :-P

Hummus

3 cups of zucchini (peeled and chopped)

I'm not sure I'm getting enough carbs 'cuz I eat very little grains or beans and I am always worried of overdoing fruit.

Well, rest assured that if you are consuming enough calories with your diet, and not exclusively eating fats and proteins, you are most likely getting enough carbohydrates. Carbohydrates exist in just about anything you can eat. By simply eating enough food during the day, you can easily meet your body's carbohydrate requirements.

There are two classifications of carbohydrates: simple and complex. Grains and beans fall under the complex category, while fruits fall under the simple category.

As promised, here's another question I'd like to openly address here instead of via Wendi's email system. This one also comes up from time to time, and I told this person to watch out for my two cents on this issue. So, here it is. The reader asks:

You're in for a treat with this recipe. Our Guest Raw Chef this week is Shivie Kaur, half of "The Cook and Butler" duo of TeamRaw. Wendi shot this video a few weeks back in San Francisco during Pure Jeevan's recent cross-country tour! This recipe is an adaptation of one from "Rawvolution", by Matt Amsden. As of this point in time, "Rawvolution" is my favorite recipe book. Most of the recipes are high in sodium and fat, but very satisfying for those who are used to eating cooked foods.

During some "highway philosophization" (my term for pondering everything and anything while driving) this afternoon, I eventually began to think rather deeply about human aggression, and specifically about how people hurt other people. Mainly, I was thinking about individual aggreession, although, as a group, humans are unfortunately rather prone to it.Wikipedia maintains a list of ongoing conflicts (i.e., wars), in fact. According to that page, there are seven major wars happenning right now and 15 additional significant ones. Of course, there are scores of unlisted ones ongoing as well, most of which the average person has never heard about.

Well, Wendi and our daughter, KDcat, are headed out this evening on a train for their cross-country tour. They didn't seem so sad to leave ... maybe it's because of the bounty they're taking with them! Check it out in the banner above as well as the snapshots below! As many of you know, Kevin and Annmarie Gianni (of Renegade Health) have now started their RV tour, for which they selected Pittsburgh as their official kick-off location. While here, we at Pure Jeevan took a special ride in "The Kale Whale," their veggie-oil-powered RV. Inside, we enjoyed a comfortable ride (which included hanging out with Johnny 5 -- their cat -- and drinking some hot tea prepared right there in the Kale Whale). Outside, we endured the freezing cold temperatures of Pittsburgh while pumping filtered used veggie oil into special holding tanks in the RV.
