I'm in the mood to eat lemons, so I figured for today's Makin' It Monday I'd search the Net for some lemon recipes. Well, look what I found!

Within the raw food community, a controversy seems to have been brewing for the better part of a year! The topic: Agave nectar (also called agave syrup). Surely by now most people know what agave nectar is. For anyone who doesn't, it's a thick liquid sweetener made from, you guessed it, the agave plant.

In general, the production of tasty agave nectar involves heating the plant to a certain temperature (which varies widely according to which manufacturer is making it and which species of agave is used). The extent of this heating constitutes a significant part of the controversy (as most raw foodists believe that heating any food over a certain temperature, usually somewhere between 105 and 118 degrees fahrenheit, renders it "dead").

I love this video, in which Wendi interviews our new Portland-based realtor, Bill Futrell. It's a nice interview, but I love the way Wendi's enthusiasm for raw foods rubbed off on Bill almost immediately. There's even a moment in here in which Bill starts talking about Natural Zing. We thought for sure everyone would think we put him up to that, but he did it absolutely spontaneously! So, thanks Bill for helping to support our Snack Sponsor. One thing I can tell you for sure: Portland is WAY more expensive than Pittsburgh. A year ago, I invested a ton of time reading about low-cost cob houses, straw-bale construction, Earth-ship homes, homes fashioned from "obtanium," thatch roofs, off-the-grid systems, igloos, you name it -- anything DIY-oriented. (Okay, well not igloos; that was a joke. Even though igloos are probably pretty neat-o.) I'm sure we'll get to many of those types of projects one day still. But for now, as you can see, we're going to put down roots in a really great city out West. We're doing it with intention, though, and in harmony with our mission to help ourselves and others obtain the highest levels of health and happiness.

Jim here with another wonderful edition of Weird Wednesday. Here's something I find a little weird about food (and, I apologize in advance if this comes off a little preachy).

See, I work in an office and sit rather close to the corporate kitchenette. Routinely, people bring in junk food to set out for everyone -- cookies, donuts, cakes, pastries, pies, candy bars, nut rolls, cheesecakes, summer sausages, cheese cubes, fondues, etc. The thought seems to be that, in putting these things out for everyone, you're showing you care for them.Offering large servings of concentrated fats and refined sugar is viewed as a favor, as an altruistic service for your fellow coworkers. But this odd fact isn't even the weird aspect of my post (although, now that I think of it, that is pretty weird).

Jim here... Here's an interesting way to finish out the week: Today just happens to be my one-year "rawniversary." That's right, for the past full year, I've existed as a 100% raw food vegan.

Sure, I'd been "high-raw" for a couple of years prior to September 18, 2008 -- and it was during those high-raw years when the bulk of my weight came off and when I kissed prescription meds goodbye (I'd been on powerful beta-blockers for my heart and blood pressure).

Well, here's my latest update on my nine days of mono meal eating. I have a headache this evening and I'm headed to bed early. I'm hoping the headache is a detox symptom and that it will be gone when I wake up.

A month has gone by since my last health update. At this point, I consider myself healed of lyme disease! In the past I asked the lyme specialist doctor if there's a way to test to see for certain the lyme is gone, but he said there isn't. So, I go on my inner wisdom, which tells me that it's gone and now I simply need to continue healing from all that the lyme brought with it.

We're still not comfortable sharing what we've been learning and doing to help move my body into an even healthier state, but it's obviously working. I've been able to go back to daily living, for the most part, without much assistance at all. I've organized the house again (Jim and KDcaT were busy caring for me and the house wasn't the top priority for the past half a year), caught up on all of the laundry, responded to all of my email that had been piling up, and I've been able to be more social again. The biggest improvements are that I can now prepare my own food without experiencing any pain, and I can dress myself with only minimal assistance at times! BIG improvements!

The other day, before grocery shopping, I didn't have a lot of food in the house. When that happens, I usually take a look at what I have and then try to come up with something tasty. It's kind of an art form, to create something out of next to nothing. I think I learned the art from my mother, who had to make things stretch on a very minimal budget.
