A Bit of India in Pittsburgh s Back Yard?

During an intense personal journey in recent years, I ve discovered that the more I m able to know my true self, the more my perception of the world changes. As a result, my surroundings have changed as well ?people, places, directions. At one point, internal and external changes happened so rapidly, it was difficult to fully process anything; I felt overwhelmed.

Amid urges to explore so many new directions, all at the same time, it became impossible to focus. My initial instinct was to flee to India, where I could peacefully stay at an ashram and process all that was transpiring in my mind. Although circumstances kept me from traveling abroad, I knew I needed to simplify. That s when I remembered an old issue of Point of Light I d kept. I dug it out and quickly flipped through the pages? There it was: Peaceful Valley Ashram & Retreat, located just north of Pittsburgh!

The other day, before grocery shopping, I didn't have a lot of food in the house. When that happens, I usually take a look at what I have and then try to come up with something tasty. It's kind of an art form, to create something out of next to nothing. I think I learned the art from my mother, who had to make things stretch on a very minimal budget.

Here's what I created, and it turned out great!

For the most part, I've been eating intuitively from the very start of my raw food journey (which began over two years ago!). I noticed that I was drawn to different foods for blocks of time, and as my interest would wane I'd find myself drawn to another raw food. Anyone who has followed my story to health knows about my love for young Thai coconuts. My entire body would vibrate with physical excitement every time I picked up another case of those life-enhancing baby coconuts. I felt like a child receiving a much-desired gift---giddy with excitement and unable to stand still. I'm not just saying that, either---it was a very strange sensation, feeling such excitement over a food.

Well, my love for the coconuts faded and I found myself drawn to other foods over the past few years. However, none of them ever compared in intensity to my desire for the coconut. I can't recall all of the foods I cycled through, but there were plenty of food cycles I went through. Currently, I'm intuitively drawn to the pineapple. I want to eat it at least once a day, sometimes more. I haven't tired of it in the least bit.

It turns out that planning a 40-day/40-night cross-country trip is a LOT of work! (Who knew ??!) Wendi and I seem to be spending every waking moment planning this thing, which may explain why we've missed a day or two's posts here on Pure Jeevan. But, we're gearing up for something absolutely amazing -- and it all starts next week!? So, if there is a quiet day or two this week, just keep in mind that the rawsome content is going to be absolutely insane here starting late next week and continuing through March into early April!

Today, we wanted to extend a huge thanks to Jeff and Helen Rose, owners of Natural Zing, for offering to sponsor the snack portion of Wendi and KDcat's trip. Many of you know some of my story of healing. I suffered with Polycystic Ovarian Syndrome (PCOS) since I was a young teenager. Over the years, I began putting on more and more weight until I was nearly morbidly obese. I learned a lot about PCOS and how there is always an accompanying issue with Insulin Resistance.

Countless overweight women search the Internet looking for help in dealing with PCOS, hoping to find a natural cure to the harsh medications often prescribed that tend to cause other health concerns in our bodies. One of the most often asked questions is from women who have a pretty good understanding of PCOS. One of our readers, Julie, asked me to update her on what kind of diet I'm doing and why I'm doing it. The last time I publicly made changes with my diet, I received many similar questions. So, I figured maybe it would be a good idea to respond to her question here on the blog for anyone else wondering the same thing.

I did explain, in a long post, about experimenting with my diet being important to me.If you didn't read that entry, it will answer a lot of your questions. For many of you, I think I know what you are thinking: "Wendi was pretty much morbidly obese, her health was horrible, but she's now healthy. Why would she change anything with her diet when she has already found what works "?

Well, it's true. I am extremely healthy compared to how I was before I started consuming raw foods. Here are some pictures to show the changes, to motivate some of you currently struggling with eating more raw foods...

Jim here... Yesterday, Wendi toughed it out and typed up a lengthy health update (a painful process for her -- trust me!). So, for the rest of this week, I'm going to fill in here (letting her get back to her resting and healing) and share a few interesting stories related to this Lyme adventure. But first, I wanted to add that today brought some great improvements in Wendi's condition. She was able to do a physical movement (wrapping a towel around her head) without pain for the first time in months. So, we really think those antibiotics are starting to kick in.

Today's topic is intuitive eating. I'm certain we've covered this many times on the blog here. So, rather than explain what it is again, I'll just share an intresting example. Basically, while dealing with these Lyme symptoms, Wendi experienced a serious craving for olives.
