Jim here... Wow, we haven't posted in a few days. That calls for some action! Hmmm... how about taking a look at some delicious mini pizzas Wendi whipped up the other day:
We went absolutely nuts for these little "pizzas." They were both tasty and fun. If memory serves, I believe she made them by taking slices of firm roma tomatoes, spooning on some improvised pesto sauce that she whipped up, sprinkling on some chopped basil leaves, sprinkling on some "cheese" that she made with ground Brazil nuts, garlic, and salt, and then topping each "pizza slice" off with a half cherry tomato. No recipes necessary here; just take a look at the picture & go try it!
As you read this, calming violins open a familiar tune and that sweet mellifluous voice of Etta James soon enters your mind: "At laaaaaaaaassssst. My looooove has come along....." Great tune, right ! Well, it's appropriate here because, at LAST, here's the long-awaited Episode #9 of Know Your Food! That's right, friends, today we're going to explore the wondrous FIG in all of its sweet, soothing glory. One taste and happiness blossoms within you, washing over your entire being... Jim here... It's been nearly half a year since we posted a long meditation on living patiently, noting the unique, sometimes-at-odds dovetail that exists between (1) experiencing the zen of patience and (2) living the electrically charged life of raw foods. While we're STILL living with the same patience we talked about, I have to admit there have been times when we've been in not-so pleasant touch with some real frustration about getting our home sold and finally moving on to all of the exciting stuff we have planned for us and for you.
Wendi and I are absolutely ecstatic about taking our raw foods message to the next level -- and not just "next level" meaning more a few more blog posts and videos, but a true quantum leap in terms of our immersion into this world and commitment to advocating the lifestyle. It just gets a little tough, even when practicing patience, to be kind of stuck in the starting gate.

In some wonderfully literary sense, there must be some kind of unique metaphor that could be constructed around the process by which cabbage turns to kimchi. Personal growth is not always easy, as any success technologist will surely tell you; ?there's a lot of doubt and oozing and off-gassing involved -- and yet, the final product is surprisingly pleasing to the palate.
Yes, it's time for us to update you on our first-ever kimchi experiment. If you want the short version:? I believe we have been successful! For those of you with a few more minutes, I'll share some of the lurid details. Highlights of our experiment included:
Jim here... Today is April 25, 2009 -- Wendi Dee's Birthday!!? She's asleep now. It's 1:30 in the morning & I've been up for hours assembling something stunningly amazing to share with you. You see, this year, I asked some friends, family, and foodies to take a page of a sketchbook and offer Wendi some Happy Birthday wishes -- and then send it back to me so I could bind it all into a large book!? WOW!!! WOW!!! WOW!!! Check out the response from 40+ people from around the globe. It's a little overwhelming to see this much positive energy in one place. Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. However, if they are huge fans of Wendi's, they are more than welcome to contribute via email or comments! LOL ;-)

Is low fat more expensive? When I was eating a lot of nuts and seeds, in the back of my mind I kept saying, "Someday you'll eat less of these nuts and seeds, and you'll save a lot of money." I really believed that to be true because organic, raw nuts and seeds are outrageously expensive.
For one hundred days, I'm transitioning to a lower fat raw diet. I'm down to fats only in the evening, and for the next ten days those fats will only come from avocados, young coconuts, and possibly some hemp seeds. If I'm not hungry for the fat, however, I'll go without it. That hasn't been the case yet, though. By dinner time I'm ravenous and wanting to eat heavy, dense foods to calm the hungry beast in my belly. Even though I've been including some fats in the evening, I'm eating significantly less than I normally would if not doing this challenge. So, I've been eating more fruits and vegetables to get the calories I normally received from nuts and seeds.
For the most part, I've been eating intuitively from the very start of my raw food journey (which began over two years ago!). I noticed that I was drawn to different foods for blocks of time, and as my interest would wane I'd find myself drawn to another raw food. Anyone who has followed my story to health knows about my love for young Thai coconuts. My entire body would vibrate with physical excitement every time I picked up another case of those life-enhancing baby coconuts. I felt like a child receiving a much-desired gift---giddy with excitement and unable to stand still. I'm not just saying that, either---it was a very strange sensation, feeling such excitement over a food.
Well, my love for the coconuts faded and I found myself drawn to other foods over the past few years. However, none of them ever compared in intensity to my desire for the coconut. I can't recall all of the foods I cycled through, but there were plenty of food cycles I went through. Currently, I'm intuitively drawn to the pineapple. I want to eat it at least once a day, sometimes more. I haven't tired of it in the least bit.
Sad Update: Our friend Michelle Pierson, interviewed here, passed away in July 2016 after a kayak accident in Hawaii.
We've spent the past three days focusing on the core subject of critical importance in the raw food lifestyle -- the FOOD! Over the weekend, we attended a fairy festival in Eugene, OR, called Faerieworlds . ?It was great fun -- loads and loads of interesting shops, festival-goers in costumes ranging in complexity from simple fairy ears to full-on ensembles, and some spectacular tribal bands on the main stage all day long.
What was unexpected, though, was seeing not just one (which, alone, would have been impressive), but *two* food carts dedicated to raw foods. ?The first was called Luminescent Foods:
