Today, for Makin' It Monday, Jim has taken you through the steps of making a vegetable wrap. He came home for lunch, pulled the veggies out of the fridge, and the filming began. He quickly shows how just about anyone can prepare fresh, raw, delicious food in less than fifteen minutes. His goal was to get it done in under ten minutes, but it actually took about fourteen. Still, fourteen minutes to prepare amazingly tasty, delicious, and nutritious food is AWESOME!

I have enjoyed including information about new people, companies, and sites here in our blog for you to meet each Tuesday. Today, however, I want to do something a little bit different. Instead of someone or something being introduced to you, I'd love for YOU to introduce yourself to ME!

This past weekend we had the pleasure of Rhio and her partner, Leigh, visiting with us. Rhio was in town for a presentation on Genetically Engineered foods (more about that here) and she took the opportunity to spend some time with us. It was a lovely weekend and we talked about all kinds of things (yes, even non-raw food things!), laughed a lot, enjoyed delicious raw foods, and got to know each other better.

While they were here, Rhio and Leigh agreed to allow us to interview each of them for this blog. Since we needed to keep the interview under ten minutes (the maximum time allowed on most video sites), we decided to ask questions about topics we had already touched on with Rhio and Leigh during their stay--things we thought might be interesting for all of you to hear about.

Many of you know some of my story of healing. I suffered with Polycystic Ovarian Syndrome (PCOS) since I was a young teenager. Over the years, I began putting on more and more weight until I was nearly morbidly obese. I learned a lot about PCOS and how there is always an accompanying issue with Insulin Resistance.

Countless overweight women search the Internet looking for help in dealing with PCOS, hoping to find a natural cure to the harsh medications often prescribed that tend to cause other health concerns in our bodies. One of the most often asked questions is from women who have a pretty good understanding of PCOS. They want to know if they need to be careful with fruit consumption if they have PCOS and are trying to lose weight.

It turns out that planning a 40-day/40-night cross-country trip is a LOT of work! (Who knew ??!) Wendi and I seem to be spending every waking moment planning this thing, which may explain why we've missed a day or two's posts here on Pure Jeevan. But, we're gearing up for something absolutely amazing -- and it all starts next week!? So, if there is a quiet day or two this week, just keep in mind that the rawsome content is going to be absolutely insane here starting late next week and continuing through March into early April!

Today, we wanted to extend a huge thanks to Jeff and Helen Rose, owners of Natural Zing, for offering to sponsor the snack portion of Wendi and KDcat's trip. Jeff and Helen understand that, being a raw foodie, it can be a little tough to be on the road for such a long time. Isn't it amazing how many different, stunningly delicious salad dressings there are in the world ! It's mind-boggling! There could easily be an entire blog devoted to nothing but raw salad dressings -- and I bet, in the right hands, such a blog could go on 5 days / week for literally years before truly exhausting the subject.

The world simply abounds with good recipe ideas -- and "abundance" is really the mentality you need to embrace when you're doing anything in the culinary world, raw or otherwise. The other side of the spectrum is the "scarcity" perspective, which is when you think, "Oh, I'd love to write a cookboook or create a recipe, but there are already millions of them out there and all of the great culinary creations have been done already."

Welcome to Episode 4 of Know Your Food. Wow, the PEAR episode is here at last! Aren't you thrilled to know that? Of ALL of the fruits, veggies, nuts, seeds, herbs, etc. in the knon world, we finally got to the wonderful pear. Well, it's no surprise, when you think about it. After all, sweet, mild pears are usually among the first fruits fed to babies. So, chances are, you were fed them, too, as a toddler. So, let's dig in, shall we?

Pears contain water-soluable fiber (pectin), Vitamin A, Vitamin B1, Vitamin B2, Vitamin C, Vitamin E, Copper, Potassium, Posphorous, Folic Acid, Niacin, Iron, Magnesium, Sodium, Sulphur, Calcium, and more! As promised, here is the picture again of the Mexican meal I created the other day. It will be served at the upcoming 3-Day Raw Food Spiritual Ashram Retreat (only a few spaces left!). Jim here... As I hinted at last week, I decided to try changing things up a bit and seeing what I thought of it. The salad you see above included the first cooked food I've had in more than two years. If you look closely, you can see that I sprinkled on a few spoonfuls of black beans. Also, in the upper left corner, there's a small spoonful of quinoa. I don't want to give the wrong impression here: ?This blog will certainly remain a major go-to source for raw food nutrition information. It's just that, today, I want to talk about experimentation a little bit.

First, I think it's generally healthy to experiment with your diet -- especially when you get the sense that something isn't working in your current diet.
