Wow, is it really Episode 3 already? How time flies! Remember way back when we started this informative, informational, nutrition-oriented "Know Your Food" series? Seems like ages ago, doesn't it? (Oh, wait... It WAS ages ago. It's just taken us a while to get up to speed with this video stuff!) Anyway, here's the video, followed by some camera/video editing news -- oh, and of course some highly urgent celery information. (Okay, it isn't really urgent at all; we just needed to add a dash of drama.) So, see what you think. You might even learn a thing or two about our stalky green friend.
Not TOO bad, right? We're getting to our goal of roughly 3-minute episodes. Of course, this is still one of our first attempts, shot last Sunday. We thought it was decent enough to not entitle it "salvaged" as we did the previous installment.
Something has come up and it may put some of our projects on hold for about six months, or so! What could come up to make us give up our goals/plans for 2009? Umm...how about being awarded The Best Job In The World, the Island Reef Job! Australia is doing some major tourism marketing for their lovely Paradise Island. For six months an individual will live in a 3-bedroom home, comb the beach, blog about the experience, do some video blogging, respond to interviewers, feed fish, and just basically live a life in Paradise!!
To live this dream life, you'll be awarded $105,000 USD and be flown to the island!
One reason I keep going on and on lately about raw desserts and raw ice creams is best conveyed with an example. ?Here are the ingredients in Cool Whip, a commonly available whipped topping:
- water
- hydrogenated vegetable oil (coconut and palm kernel oils)
- high fructose corn syrup
- corn syrup
- skim milk
- light cream
- less than 2% of:
- sodium caseinate
- natural and artificial flavors
- xanthan and guar gums
- polysorbate 60
- sorbitan monostearate
- beta carotene (color)
Wow, I had a chemistry set in 5th grade that had a lot of things that sounded like some of those items. It's actually mind-boggling to envision the industrial processes necessary to produce everything on that list -- not that it's entirely possible to do so. After all, among the list of ingredients are "natural and artificial flavors." Ever wonder what, exactly, those are?

A few days ago, we'd mentioned that Wendi had done a five-day water fast as part of her early dealings with Lyme disease. This was the first time I can recall in our household anyone fasting for more than a day or so, although there may have been the odd juice fast now and again for a few days.
Thinking back, I can tell you that, all while I kew Wendi (and especially during her cooked years), such an extended fasting would never have happened because she used to get wicked headaches any time she went without food for more than a normal time period between meals. This makes perfect sense, of course, as you really do have to be in fairly good health to successfully fast -- and, during those "cooked" years, we were both extremely unhealthy! (More on the reasons for all that later, as Wendi will likely do a write-up on fasting at some point.)

Today we are doing some Spring cleaning and getting rid of stuff that has been collecting that we don t really need or use. I just finished the bananas (eight of them) and later I ll start eating the oranges that we have. I have plenty of oranges to get me through the day and into tomorrow until we go shopping. I m hopeful that there will be cantaloupes at the food co-op tomorrow. It would be fun to have a cantaloupe day!
How many days do I have left? I guess three? Overall, it hasn t really been all that difficult.
Mistakes are bad, right Well, not always. Here's an example of a great one, and it's something that demonstrates a conviction I have about raw foods! You see, in all of this talk of moving to Portland, I made a huge gaffe recently in my thinking about finances.
You see, I was pondering the terms of a home loan one afternoon -- percentage rates, down payments, monthly payments, tax escrows, etc. It was all really dry, boring material. Suddenly, I thought to myself, "Wow, here we are about to buy another house, after owning this one for so many years. In less than 10 years, we would have owned this one outright, but now we'll be starting over again with a 30-year mortgage."
For today's Makin' It Monday feature, we'd like to present "Salsa Campechano." We'll have to admit, though, that we do not speak Spanish. So, we have to give some credit to Google's online language translator. When we went to name this recipe, Wendi suggested that this is a "manly" dish (since I created it). However, we didn't find the perfect Spanish word to fit the recipe.Then, considering the walnuts in the recipe, Wendi suggested that perhaps "hearty" was a better adjective. Google returned the Spanish word campechano for this, and we immediately thought: Yes!, that sounds just perfect!? So, here's an amazing recipe for you. It's a hearty salsa recipe, but I actually like to eat it as a soup.
I started writing on a raw food forum about the oranges coming in today. But, I was on my way out the door and I had more to say about them than I realized, so, I figured I'd paste what I wrote, so far, and add to it here in our blog. ;-)

Clarifications: (1) Yes, as some of you may have guessed, Wendi's body has circled the sun more than 25 times. If you visit the site, I explain what the "25th" birthday means a little more. It's basically about the amazing power of raw foods. (2) No, I didn't send messages to David Wolfe, Gabriel Cousens, Woody Harrelson, or other raw food celebrities Wendi isn't friends with. Here's a picture I took at Portland's Saturday Market last week. We've been pleasantly surprised to find that artichokes grow rather well here in the Pacific Northwest. We don't recall seeing them much back East, but many of our neighbors grow them (both for the artichokes and, I suspect, as ornamental plants).
I suspect that some raw foodists tend to overlook artichokes because they're so traditionally linked with the image of something steamed, stuffed with breadcrumbs, and drizzled in butter -- so, "cooked," "breaded," and "dairy" all together in one recipe! Being half Italian, I grew up eating them this way. My mother almost never said "artichoke"; she always called them an Italian word that sounded like "ga-GO-che-lee." ?She made them just a few times per year, and they were always a huge treat (and we'd often fight over the hearts -- by far the best part!).
