Jim here... Sorry for being away for so long. We've got SO much going on these days, it's mind-boggling! More on that later, as I have something in mind already for today...I should start by clarifying that I've been basically raw for almost 4 years now (high-raw, you might say). During the first nearly-two years, I still ate meat from time to time. Actually, I still ate (and drank) almost everything from time to time -- sugars, processed foods, alcohol, you name it -- only less than I did before, and within the context of a dietary intake consisting of a significantly higher percentage of living foods. In those early years, I'd estimate I was averaging 75-90% raw. Not bad ... I definitely experienced improvements in my health!

The big change in consciousness didn't follow until two years ago. (This is an interesting point because, as you can see, I wasn't "ready" for a bigger change for two years into eating a lot of raw foods!) I suppose the difference was that, during the early years, I was pretty much raw by default rather than by conscious decision. As Jules said in Pulp Fiction, "... my girlfriend's a vegetarian. ?Which more or less makes me a vegetarian..." Yeah, that was my case back then, too, although I certainly grew into it (and am thankful that I did).

As promised yesterday, here s the Pure Jeevan cross-country tour itinerary! Will Wendi and KDcat be in your town or city? If so, please be sure to let us know, so they can meet you in person! We re all very excited that Pure Jeevan will be meeting some of you in person very soon!

Something has come up and it may put some of our projects on hold for about six months, or so! What could come up to make us give up our goals/plans for 2009? Umm...how about being awarded The Best Job In The World, the Island Reef Job! Australia is doing some major tourism marketing for their lovely Paradise Island. For six months an individual will live in a 3-bedroom home, comb the beach, blog about the experience, do some video blogging, respond to interviewers, feed fish, and just basically live a life in Paradise!!

Hi there, lovely Pure Jeevan family members!

It's so sweet that many of you are concerned about us, wondering where we are and what we are doing since the blog has been quiet for quite some time. We feel very loved! *blows kisses to everyone*

Well, our trip to Portland, Oregon, went well. We bought the fixer-upper home that will eventually house Pure Jeevan, and did some preliminary work on it (it's a *true* fixer-upper and is going to require *a lot* of work and investment). A few times during our stay in the new home, Jim and I both looked at each other, wild-eyed, wondering what we had done. Following one's intuition can be a bit scary at times, but we've learned over the years that things always work out for the best and that these sometimes scary, unknown times are what help us grow and learn in ways we had never imagined.

So, did you think we'd forget about Makin' It Monday during Wendi & KDcat's big cross-country tour? Absolutely not! ?While in Salem, Wendi filmed Kerry Matson demonstrating one of her favorite raw recipes -- heck, one of our favorites, too! I'd have to say that raw apple pie is one of the classic raw dessert recipes. Everyone interested in raw should know how to make this! (And anyone who tastes it will soon be interested in raw!)

Jim here... Anyone else like a good funky beat ? Who's familiar with Kool & the Gang's 1973 classic, "Jungle Boogie"? Surely a lot of people know that awesome tune. If you do, recall some of the main lyrics: "Get Down Get Down, Get Down Get Down!" That's the tune I want you to keep in mind as you read this post. Hear the drums, the bassline, the electric guitar, the horn section, the voices, the phrasing, the overall dynamics of that distinctive groove. Consider how magically it all comes together.

Wow, today is Day 7 of the Big 2010 Tour! So far, Wendi and KDcat have spent three days on a train and three more in Portland, Salem, and Corvallis. We still have plenty of content to post from those, including a good deal of video (once I'm able to edit that). For now, let's look at some pics and talk about their second stop, Salem!

Prior to leaving, Wendi & KDcat (let's just say "W&K" from here on out, okay ) stopped at People's Co-Op in Portland for supplies. As much as they loved Portland, they weren't very impressed with the co-op there, as compared to the one we have in Pittsburgh. However, in fairness, they were told that it's still a "young" co-op. Still, it's surprising to me that Portland wouldn't have an enormous one. However, it could very well be that there is not as much of a need there, in an area in which organics are much more accepted. Here in Pittsburgh, one could argue that our co-op thrives because organics are largely scoffed at by other retailers. Interesting, eh?

(By the way, are people on the west coast really as laid back as everyone says Wendi got into a bit of hot water for filming inside another co-op! Here in Pittsburgh, I doubt anyone would care if you set up a movie set in our co-op. No charges were filed, thankfully.)

You're in for a treat with this recipe. Our Guest Raw Chef this week is Shivie Kaur, half of "The Cook and Butler" duo of TeamRaw. Wendi shot this video a few weeks back in San Francisco during Pure Jeevan's recent cross-country tour! While there, Shivie and her partner Cemaaj created and served a delicious gourmet meal for Wendi and KDcat. The blog post from that visit was here. As raw foods enthusiasts for many years, Wendi and I have had the pleasure of patronizing raw food restaurants literally from coast to coast. Between us, we've been blessed to have sampled a more diverse spread of raw gourmet foods than have most people. (We hope that many others get to do this as well!)

From time to time in anyone's raw journey, it seems inevitable that thoughts crop up about opening a raw restaurant. For some, it's likely no more than a passing fantasy; for others, it may well become a firm business goal. We believe this is a fine and noble goal -- one that we'd like to see more people accomplish!

In some wonderfully literary sense, there must be some kind of unique metaphor that could be constructed around the process by which cabbage turns to kimchi. Personal growth is not always easy, as any success technologist will surely tell you; ?there's a lot of doubt and oozing and off-gassing involved -- and yet, the final product is surprisingly pleasing to the palate.

Yes, it's time for us to update you on our first-ever kimchi experiment. If you want the short version:? I believe we have been successful! For those of you with a few more minutes, I'll share some of the lurid details. Highlights of our experiment included:
